Why is humidity control important for cold rooms?

Cold stores use humidifiers or dehumidifiers dependant on the application. Dehumidifiers to reduce coils from freezing, to reduce defrost frequency, eliminate the health and safety issue of ice forming on the floor and to ensure the structural integrity of packaging.

Humidifiers are used for the benefit of the product to ensure that hydroscopic materials do not dehydrate whilst being chilled in the cold store.  Products such as bare root seedlings can be stored at low temperature and high humidity to simulate winter months and to make the product dormant until required.

In food production, cheese stores need to ensure that the rate of maturing is controlled, similar to other maturation processes for charcuterie.
