Too high and it can make staff and customers uncomfortably sweaty, promotes mould growth and increases the infection rates for airborne diseases.  

In other buildings, such as schools, universities and offices, controlling humidity can improve attention and focus. In cold stores and storage, labelling, uptime operation and temperature control energy efficiency can all be improved through humidity control.
